Fog Mountain Cabernet Sauvignon

22.99

Description:
Fog Mountain forms part of the Boisset Collection, and pays homage to the Californian mountain ranges and the cooling fog which envelopes them and has a huge influence on Californian viticulture. The mountains offer unique aspects and varied soils on which to plant vines, whilst the fog, with its cooling effect, creates the ideal microclimate, prolonging the growing season and allowing the grapes to ripen perfectly at an ideal pace.

Vintage information
After moderate temperatures through the long growing season, California’s 2018 harvest was exceptional. Harvest was later than in 2017 due to consistent growing conditions and cooler temperatures, which allowed the grapes to mature slowly and be harvested at the optimum point of ripeness.

Vinification
The grapes were fermented in stainless-steel tanks before being pressed off the skins and then underwent 100% malolactic fermentation. The final blend was aged, partially in oak, for six months prior to bottling.

Tasting Notes: The grapes for Fog Mountain’s Cabernet Sauvignon are sourced exclusively from sustainably-farmed vineyards throughout California, including fruit from Lodi and Paso Robles. A small proportion of Petit Verdot and Petite Syrah is also incoporated into the blend.
This Cabernet Sauvignon has a deep ruby colour with alluring aromas of cherry and raspberry. On the palate, it has rich flavours of blackcurrant, plum and rhubarb with notes of currant and white pepper. The wine has soft, round tannins and a lingering finish.
